Speaking of ease, parents with hosting ex perience share that timing everything right can be far more important than what you actually serve. "What impresses me the most about these meals is that they often only take about 45 minutes," says Chatelier. Because kids are scheduled so tightly these days, she says: "They all arrive on time and then they walk right out because they have so much else to do. So the food has be hot and ready right on time, and the table has to be laid out in advance. I don't use paper plates in the house, so I use non fancy everyday dishes." Chatelier laughs when pointing out that much of the work actually comes before the dinner even begins. "The hardest part of host ing is making sure your house is clean," she adds. "It's getting all your own kids to clean up their own junk all over the house. That can take days and days."
